Pre heat grill to 135 to 140 degrees Celsius for 30 minutes. Remove membrane from the ribs and place a binder on the ribs (Frenchies Mustard). Then place your favourite pit rub on the ribs coating all over. Place ribs on the grill, bone side down for 2 hours. Spritz with water half way through to keep the ribs moist. Check at 2 hours. Place ribs in foil and cut up some salted butter and place on the ribs. Give a good covering of hot honey and wrap into a parcel. Cook for a further 1.5 hours until the internal temperature is around 95 degrees Celsius. Remove from the foil and smother the ribs in your favourite BBQ sauce. Return to the grill for 5 minutes to let them get sticky. Remove and enjoy.
