Some greens
The meal starts with gado-gado: A warm Indonesian vegetable dish combining lightly cooked greens, crunchy vegetables, boiled egg, tofu, tempeh, potato, and rice cake, all covered in a thick peanut sauce. The sauce is the heart of the dish: earthy, sweet, spicy, salty, and slightly acidic at the same time. Alongside it comes chicken satay: Small skewers of marinated chicken grilled directly over open fire. The marinade typically contains garlic, ketjap manis, turmeric, coriander, ginger, and sometimes lemongrass. The smoke from the charcoal caramelizes the sugars in the sauce and creates the dark grilled edges that define proper satay. Then the Moluccan-style marinated bacon strips: These are not simply grilled bacon. The strips are traditionally seasoned with strong spice layers often associated with Maluku island cooking
