Sweet Citrus Sting

I experimented with a new hotsauce that has a bit of a sweet aftertaste and some citrussy notes. Take Note this is not for the faint hearted

Ingredients

  • 1 cup

    Dried Jalapenos (stems removed)

  • Water

  • 1 cup

    Apple Cider Vinegar

  • 3 tbsp

    Erythritol (you can use sugar as well)

  • 3 tbsp

    Grape seed oil

  • 1 tsp

    Orange flavour Essence

  • 1 tsp

    Pure vanilla Extract

  • 3

    Garlic cloves (crushed)

  • 2 tsp

    Salt

Sterilisation and prepping of bottles Wash your glass bottles and caps with warm, soapy water. Submerge the glass bottles in a pot of boiling water and boil for 10 minutes. Drop the caps in for the final 2 minutes, then remove everything with clean tongs to air-dry on clean paper towels.

Get all your ingredients measured out as this cooks fast

Toast the jalapenos Heat a dry frying pan over medium-low heat. Press the dried jalapeños flat into the pan using a spatula. Toast for 1 to 2 minutes until they smell fragrant. Do not let them burn.

Simmer the base Add the water, apple cider vinegar, diced onion, crushed garlic, and salt directly into the pan with the toasted peppers. Bring the mixture to a boil. Turn the heat down to low, cover the pan with a lid, and simmer gently for 15 minutes until the peppers are completely soft.

Add Sweetener Uncover the pan and stir in the sweetener. Let it simmer for 1 more minute until dissolved, then remove the pan from the heat.

Emulsify and blend Allow the mixture to cool for 5 minutes so it is safe for your blender. Pour everything (including the liquid) into a high-powered blender. Pour the 3 tablespoons of grapeseed oil directly into the blender. Blend on high speed for 60 to 90 seconds until a creamy emulsion forms.

The Infusion Pour the blended sauce back into your pan and place it over low heat. Bring it to a gentle, bare simmer. This kills any bacteria picked up from the blender blades. Turn off the heat and immediately stir in the 1 tsp of vanilla extract and your Orange Essence.
